Boiled in salads
Swiss salad: place the boiled meat and diced appenzeller on a bed of mixed salad. A dish that is both substantial and light.
Ingredients
Main course For 4 people
1 tablespoon of sweet mustard
1 liter of beef broth
3 tablespoons of rapeseed oil
3 tablespoons of herb vinegar
2 tablespoons of coffee cream
salt
pepper
260 g of appenzeller surchoix
½ bunch of chives
120 g of mixed salad
300 g of boiled boiled meat, eg. in jelly
How to proceed
Preparation:
approx. 20 minutes
For the sauce, mix the mustard with the broth, oil, vinegar and cream for the coffee. Season with salt and pepper. Cut the cheese into cubes. Finely chop the chives. Mix the salad with the boiled meat and the cheese cubes. Sprinkle with the sauce. Sprinkle with chives and serve.
